SCA BARISTA SKILLS: FOUNDATION

The Barista Skills Foundation course focuses on the foundational skills required to set an espresso grinder, make espresso, steam and texture milk for cappuccinos. This course allows one to gain an introductory understanding of the coffee itself and set a foundation from which to build practical skills for milk technique and latte art, while implementing health and safety practices and customer service.


Course Details:

  • Duration: 9am to 3pm across 2 days
  • Prerequisites: There are no prerequisites for this course but aims to build on an existing basic understanding.
  • Inclusions: Exam and certificate fee, lunch & snacks each day, all equipment and necessary ingredients.
  • Certification: An online exam of 20 questions requiring 60% to pass. Practical application demonstrated. Contributes 5 points to SCA Coffee Skills Diploma.


SCA BARISTA SKILLS: INTERMEDIATE

The SCA Barista Skills Intermediate course builds on the concepts and skills introduced in the Foundation course. This course requires both a practical application and a theoretical understanding of coffee itself, specifically looking at the impact of varietal, origin and processing methods on flavour. We will look in-depth at the parameters of quantity, grind size, water quality and extraction times as they interact in a brew recipe; constructing drinks and taste differences, workflow management and efficiency, milk handling techniques and latte art.

In addition to this we will explore the sensory aspects of espresso extraction, key aspects of health and safety, customer service skills and basic business practices.

  • Prerequisites: There are no mandatory pre-requisites for this course but SCA Barista Foundation Skills is recommended.

SCA BARISTA SKILLS: PROFESSIONAL


The SCA Barista Skills Professional course is designed to test advanced barista skills and to approach the professional barista environment through the application of science behind the processes used in the professional environment. Successful learners should have a detailed understanding of high quality ingredients and the techniques available to maximize quality in any drinks that are made. Knowledge in equipment maintenance, managing others to perform their best, and giving excellent customer service will be required.

  • Prerequisites: There SCA Intermediate Barista Skills is a pre-requisite for this course. 6-12 months experience in a profession environment is encouraged.

  • Certification: Online exam requiring 80% to pass, a practical exam pass on each section. Contributes 25 points to SCA Coffee Skills.

SCA BARISTA SKILLS: FOUNDATION

Foundation course introduces the learner to different methods of brewing coffee. It consists of theoretical and practical hands-on instruction for a range of devices including automatic and manual gravity brewers, as well as other commonly used brewers with in their local culture. Explore how to produce a tasty brew based on an understanding of the essential brewing elements and an analysis of their brew results.

This course builds on the concept and skills introduced in the Foundation course. Ideally for someone with brewing experience who wants to improve their coffee quality. Learn the Exploration of the brewing process; Essential Elements of brewing; Methods of measuring and charting coffee strength, The analysis of brewed coffee and suggested adjustments to consider to deliver a well balanced cup of coffee. Also understand the importance of Maintenance and Cleaning

The Roasting Foundation course gives the learner an understanding of the roasting process, including the physical changes that take place during the process and how to control sensory aspects of the coffee by roasting light and dark. You will also gain an understanding of the basic structure of the roasting machine, general maintenance and fire prevention.

The course builds on the Intermediate course. Learners will gain advanced skills in profile development and sensory analysis evaluation. Dive deep into a wide range of topics, including control and color matching, use and configuration of roasting software, molecules involved in browning reactions, gas formation during roasting process, visual identification of roasting defects, blending, quality control as well as an exploration of production options to help meet differing customer preferences.
